摘要:

以玫瑰香型葡萄‘瑞都科美’为试材,采用冷棚栽培,滴灌供水,在坐果期和转色期分别设置充分灌溉(65% ~ 75%田间持水量,FC)、轻度水分胁迫(50% ~ 60% FC)和中度水分胁迫(35% ~ 45% FC)3个水平,共9个处理,系统探究水分调亏对植株光合特性、新梢生长、果实理化品质及单萜化合物积累的影响,结合主成分分析(PCA)开展综合评价。结果表明:坐果期水分胁迫可在维持净光合速率稳定的同时,有效抑制新梢冗余生长,但会导致单粒质量下降。转色期是调控风味与香气形成的关键阶段,此阶段适度的水分胁迫能显著提高果实固酸比,并促进单萜化合物的积累。聚类分析与变量投影重要性(VIP)分析表明,两年的水分胁迫处理均显著促进了单萜化合物的积累,其中两年共同筛选出的关键差异物质为β-月桂烯、顺式-氧化玫瑰和香叶醇,是响应水分调亏的关键香气组分。气味活性值(OAV)分析表明,顺式-氧化玫瑰、里那醇和香叶醇是果实特征香气的主要贡献化合物。基于两年主成分分析的综合评价,坐果期充分灌溉 + 转色期轻度水分胁迫处理表现最佳,能够协同实现生长调控与品质提升,为玫瑰香型葡萄节水灌溉高效栽培提供了可行的灌溉策略。

Abstract:

The Muscat-flavored table grape cultivar‘Ruidu Kemei’was used as the experimental material. Plants were grown in a plastic greenhouse with drip irrigation. Three irrigation levels were applied at the fruit set and veraison stages:full irrigation(65%-75% of field capacity,FC),mild water deficit(50%-60% FC),and moderate water deficit(35%-45% FC),resulting in a total of nine treatments. The effects of regulated deficit irrigation(RDI)on photosynthetic characteristics,shoot growth,fruit physicochemical quality,and the composition and content of monoterpenes were systematically measured. Principal component analysis(PCA)was used for comprehensive evaluation. The results indicated that water deficit applied at fruit set effectively suppressed excessive shoot growth while maintaining a stable net photosynthetic rate,but it reduced single berry weight. Veraison was identified as a critical stage for enhancing berry flavor and aroma accumulation. Moderate water deficit during this stage significantly increased the total soluble solids to titratable acidity ratio and promoted the accumulation of monoterpene compounds. Cluster analysis and variable importance in projection(VIP)analysis showed that deficit irrigation over two years notably enhanced monoterpene accumulation,with β-myrcene,cis-rose oxide and geraniol being the key signature monoterpene components in response to water deficit. The OAV analysis indicated that cis-rose oxide,linalool,and geraniol were the main contributing compounds to the characteristic aroma of the fruit. Based on the two-year PCA evaluation,full irrigation at fruit set followed by mild deficit irrigation at veraison achieved the best overall performance. This irrigation strategy synergistically optimizes growth regulation and fruit quality improvement,providing a feasible approach for water-saving and high-efficiency cultivation of Muscat-flavored table grapes.
