Studies on the Relationship of the Development of Bitter Pit in Apple Fruits with the Contents of Calcium and Magnesium and the Activities of Antioxidant Enzymes

Abstract: The calcium contents in all parts of bitter pit apples were significantly lower than that of the sound ones , but only the contents of magnesium at the outer cortex significantly higher than the sound ones. The activities of superoxide dismutase (SOD) , peroxidase ( POX) , catalase (CAT)
and ascorbate specific peroxidase (APX) in the pitted fruits were significantly lower than that of the sound. Vacuum infiltration of apples with CaCl2 100 mmol/ L increased activities of the above antioxi dant enzymes , and the treatment of MgCl2 decreased the activities of POX, APX and CAT , implying
the activities of these three enzymes were regulated by calcium. The contents of malonaldehyde and the relative conductivity were higher in bitter pit apple fruits , which showed that the peroxidation of membrane might be the important reason of the physiological disorder in apple with lower level of calcium.
