The Relationship between Changes of Cell Wall Components, ectin-degradingEnzyme Activity and Texture of Postharvest Pear Fruit

Abstract: ‘Huanghua’and ‘Xiangnan’pears were used as materials to understand changes of cell wall components , calcium content , fruit firmness and activity of pectin-degrading enzyme in relation to their texture. The results show that changing trends of the above change of two cultivars were similar , but some differences exist , 1) Compared with‘Xiangnan’, content of cellulose , proto pectin and fruit firmness of‘Huanghua’being poor storeability was lower , while content of calcium , water-soluble pectin was higher ; 2) Content and synthetic rate of lignin in flesh of ‘Huanghua’pear was higher ; 3)Polygalacturonase (PG) activity of ‘Huanghua’was significantly higher than that of ‘Xiangnan’during early storage , but there was little difference in PGactivity at late storage stage. However , pectinmethylesterase (PME) activity of‘Huanghua’was significantly higher than that of ‘Xiangnan’.
