Analysis of Sugar and Acid Component Contents in Fruit of 100 Southern Plum Germplasm Accessions

Abstract:

The sugar and acid components and their characteristics in fruits of 100 southern plum (Prunus salicina)germplasms collected from South China,Southwest China,and East China were systematically determined and analyzed. The results revealed that glucose and fructose constituted the predominant soluble sugars,while malic acid was identified as the principal organic acid in southern plum fruits. Significant positive correlations were observed among glucose,fructose,and sorbitol contents,whereas sucrose exhibited no significant correlation with other sugar components. Malic acid content demonstrated a highly significant positive correlation with citric acid,while significant positive correlations were also detected between tartaric acid and malic acid,as well as succinic acid and citric acid. Among them,the malic acid and total acid contents of the South China plums were significantly higher than those of the other southern germplasm,while the total acid content of the Southwest China plums was lower,demonstrating significant regional differences.
