摘要:
以71份枣种质半红期果实为材料,测定不同种质的口感质地特性、水溶性果胶、离子型果胶、共价型果胶、纤维素、半纤维素等细胞壁组分含量,并进行相关性、主成分分析和综合评价,解析枣果质地差异的形成原因。结果表明,离子型果胶和共价型果胶变异系数较高,果肉致密指数变异系数最低。相关性分析表明,口感评价指标与水溶性果胶、离子型果胶、总果胶、果肉致密指数相关性最高。通过主成分分析,得出水溶性果胶、共价果胶共价型果胶、离子型果胶/共价型果胶、总果胶/(半纤维素 + 纤维素)为影响果实质地的重要因素。71份种质的口感总分范围为3 ~ 10分,综合评价H值在-1.18 ~ 1.10之间,总体上,综合评分能反映果实的口感品质;鲜食种质细胞壁含量显著低于兼用和制干种质,兼用种质与制干种质差异不显著。
