Abstract: The paper studied effects of physiologicalmetabolism and desiccation sensitivity for drying velocity on chestnut embryo axis through three different drying methods. The results indicated that the desiccation sensitivity of axis and the criticalwater content in axis for silica gel drying are lowest. Axis vigour showed negative correlation with electric conductivity as well as remarkable negative correlation with the content of MDA. Reaction of axis for stress increased, and anti-oxidative systems in axis were triggered rapidly.
