摘要: 总结了近年来辣椒素类物质的研究进展和现状,系统阐述了辣椒素的生物合成、影响因素、检测策略和生理功能,并对存在的问题和发展方向进行了探讨。

关键词: 辣椒素, 二氢辣椒素, 辣椒素酯, 苯丙氨酸氨裂解酶, 斯科维尔指数

Abstract: This paper reviewed the research progress and current situation on capsaicinoids biosynthesis,influencing factors,detection strategies and physiological functions of capsaicin. Moreover,this paper discussed existing problems and research development directions on Capsaicinoids.
