摘要: 以7年生棚架和篱架栽培模式下的玫瑰香葡萄为试材, 采用气相色谱—质谱联机分析了挥发性物质成分相对含量在成熟期的变化。结果表明, 随着采收期推迟, 两种栽培模式下葡萄的酯类物质相对含量均明显增加, 酮醛类化合物相对含量减少, 萜类物质总的相对含量也有下降趋势; 不同形态萜类物质相对含量比例因采收时间不同而有差异, 前期结合态比例明显高于游离态, 后期两者比例相当。篱架葡萄成熟后期酯类物质相对含量高于棚架, 而酮醛类物质和萜类物质相对含量低于棚架。桉叶油素主要以结合态存在, β - 月桂烯则主要以游离态存在, 两种物质在棚架葡萄上的相对含量明显高于篱架。

Abstract: Using seven-year ‘Muscat Hambourg’ cultivated with pergola and vertical trellis systems,changes of relative contents of volatile compounds in maturity were examined with gas chromatography-mass spectrometry (GC /MS). Results indicated the relative content of esters had increased sharply, but that of ketones and aldehydes had decreased. The general relative content of terpenes tended to drop alongwith the delayed p icking stage. The content ratio of terpenes varied from p icking time. Potential terpene ratio for earlier
maturation was remarkably higher than that of free terpene, but nearly the same later. The relative content of esters in grapeswith vertical trellis system was higher than that of pergola system during latermaturation, while the relative content of ketones, aldehydes and terpenes lower. There was a higher relative content of Eucalyptol and Beta-Myrcene in grapes with pergola system than that of vertical trellis system. Eucalyp tolmainly existed in the form of potential terpene and Beta-myrcene in free terpene.
